Some home-grown tomatillos, courtesy of the Preston’s, inspired tonight’s meal. Renata made a salsa, and we threw together some tacos. They were delicious. I should really be writing a fellowship application right now, so I won’t go into too much detail, but here are some pictures and an idea of what we made.
Blend them all together in a food processor.
Black beans, onions, garlic
We used this as a taco filling. Saute the onions and garlic in olive oil. When they are softer add the beans, and salt and pepper. 30 seconds before removing from heat, add cumin.
